A note from the chef:
“You may ask what is Cajun food, well to answer your question simply, it is a style of food created by the French settlers of Louisiana who emigrated to Arcadia, a colony in New France, Canada and were then exiled in the 1700’s.

They made their new homes in the swamps and bayous of southern Louisiana and are a unique cultural group with their own language, culinary style and music and are known as Cajuns, a corruption of Acadiens.

Their culinary style was built on French foundations but has adapted to use available ingredients and has been enriched by other cultures influences including Spanish, West African, Italian, Haitian, and of course native American in so creating a distinct and fascinating food heritage.

I hope to bring a taste of this amazing food journey to you with my pop-up Cajun restaurant night, I do hope you will join us.”
